For students aged 19+ this course is non-funded and requires an Advanced Learner Loan to cover the course fees. Progress to a Foundation degree or Honours degree, or start work straight away as a senior commis chef in a hotel, restaurant or contract catering kitchen.

Preparing poultry, game, fish, shellfish, meat and vegetables
Preparing sauces, purees and side dishes
Kitchen and larder practice and theory
