This is a skills-based course where students will traditionally need to start at Level 1.
Leads on to
Progress to the Level 2 Diploma in Professional Cookery. Alternatively, you may wish to seek employment as front of house staff, waiting staff or bar staff.
If you have a passion for food and wish to pursue a career in the hospitality industry then this course is a great place to start. You will learn the practical skills you’ll need for success in the kitchen or in the restaurant. At the start of the course we will teach you how to use professional equipment (including chefs knifes) correctly, lay up tables and how to work in a real working restaurant serving the public safely. By the end of the year, you will be comfortably be running the kitchen and restaurant. What you will study:

Practically preparing and cooking food products by:
Poaching, boiling & steaming.
Grilling, baking & roasting
Deep and shallow frying
Stewing and braising
Preparing cold food products and regeneration
Preparing hot and cold beverages

Investigating the hospitality and catering industry
