Grade 4 in GCSE English and maths and two additional GCSEs at grade 4, or a strong Merit profile on a relevant Level 2 qualification.

After taking this qualification you could increase your supervisory skills by completing a Level 3 relevant leadership or supervision qualification. You could also seek Level 4 study, advanced apprenticeship or enter employment.

You will need to purchase a uniform and kit. Prices will be given at interview. We have industry-standard kitchens and an on-campus public restaurant called The Brasserie, where you’ll gain confidence with front-of-house and sharpen your culinary skills, ready for the industry.
ABOUT THE COURSE
Units you will cover: · Maintain Food safety when storing and preparing food · Develop productive working relationships with colleagues · Prepare fish for complex dishes · Prepare Meat for complex dishes · Prepare Poultry for complex dishes · Cook and finish complex fish dishes · Cook and finish complex meat dishes · Cook and finish complex vegetables dishes · Prepare, cook and finish complex hot sauces · Prepare, cook and finish complex cakes, sponges, biscuits and scones · Prepare, cook and finish complex pastry products · Prepare, cook and finish complex cold desserts · Produce sauces, fillings and coatings for complex desserts These qualifications are assessed by your lecturer by means of Practical and written assessments. You will also complete practical demonstrations, assignments and take multiple choice examinations.
